Gluten-Free Muffins

With all the comings and goings this summer, I've found it very challenging to stay grain / gluten free. I do keep trying, though. ;o) I made these muffins a few times this summer. They're handy to take along on trips and make a quick easy breakfast. They're best straight out of the oven - yummy & moist, but they're pretty good later too. They do tend to dry out a bit after a few days, like many homemade whole-wheat baked goods do, but over all they're a success!

Grain & Gluten Free Banana Muffins


Mix well by hand or in a food processor:

1/3 cup honey or maple syrup
1/4 cup oil
1 large eggs
1 large bananas or 1-2 medium bananas, mashed

Add:
3/4 cup + 2 Tablespoons chickpea flour
1/8 teaspoon baking soda
1/8 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract

Spray muffin cups with non-stick spray & fill half-full of banana mixture. Top with a sprinkle of chopped nuts (I used pecans, but walnuts would work well too) and a few pieces of diced banana.

*I tried making these muffins with and without the toppings, and they're definitely better with the nuts & bananas on top. I like the different texture it gives them and the diced banana gives the muffins a bit more moisture.

Bake at 350 for @ 20 minutes. {makes 1 1/2 dozen}

Be sure to eat one of these warm from the oven. Mmmmmm!
