Once a Month Cooking

So, what are you serving for dinner this month? Yesterday I spent 12 hours in my kitchen. No, I wasn't doing penance. It was my monthly "cook". Every 4 weeks I spend one looong day cooking meals for the next 4 weeks. When I'm done, my kitchen looks like a tornado went through it (I still have to do some damage control today), but my freezer is full. After yesterday I have 22 meals in my freezer and I can tell you what I plan to serve for dinner 4 weeks from today and any other day in between. I have been doing monthly cooking sessions for over a year now and I love it! In exchange for that one crazy day, I get a bit of extra time and freedom each day for the rest of the month. I always know what's for dinner and the work is already done. I just have to heat the meal up & serve it. Some people I've talked to about this envision it being one long month of soggy, re-heated leftovers. Nothing could be further from the truth! This month my family will enjoy lasagna, South West stuffed Chicken breast, Shepherd's pie, Gumbo, and Chicken & Sausage Paella, to name a few. Cooking this way has been such a blessing to our family and has lifted a big load from me, now that I don't have to decide every day what's for dinner and carve out time each afternoon to cook a full meal. I strongly recommend that you try it for a couple of months. You may just find that you like it too.
